After Belgium, Provence and assignments from the Caribbean to India, the family found in Saint-Mont the place to bring together everything they had learned: the standards of great houses, the pleasure of the table and deeply human hospitality.
As mistress of the house, she is wherever guests need her: reception, dining room, cellar or planning an excursion. She gets to know her guests and shapes their stay with them.
Chef, curious and generous. His dishes always begin with an ingredient, then tell of his Walloon roots, his travels and Gascon producers.
Pastry chef, she creates the restaurants' desserts, breakfast pastries and Le Comptoir de Carolyn, her world of travel cakes and chocolates.
In the dining room, at the bar and wherever the experience unfolds, Tom brings his sense of service, energy and a contemporary approach to drinks and alcohol-free pairings.

A place of history
Today a four-star hotel, the Monastery was once a refuge, priory, wine estate and family residence. Each era left its mark without erasing what came before.
On this rocky spur above the Adour, Raymond, Lord of Saint-Mont, founded a religious community around the church of Saint-Jean-Baptiste in 1045. The monastery later became a Benedictine priory. The monks cultivated the land and planted vines, helping shape both the landscape and Saint-Mont's wine identity.
Through fires, rebuilding and changing ownership, the place evolved. In the eighteenth century it took on the appearance of a château and became a private residence. The de Corneilhan family and later Baroness Fanny Del Peré de Cardailhac were among those who kept its spirit alive.
When the Tossens family discovered the Monastery, they saw less a monument to freeze in time than an intimate hotel to bring to life. Three years of work preserved its volumes, stone and old-world character while adding the comfort expected of a four-star hotel. Since 2019, eleven rooms, two restaurants and a spa have welcomed travellers with a deeply personal family spirit, while remaining unmistakably a hotel.
The monastery is founded by Raymond de Saint-Mont.
The priory gradually becomes a residence and château.
After three years of work, the Tossens family opens the hotel, its restaurants and spa.
